什麼是乾式熟成牛排(Dry-Aging Beef)?
在動物(不僅限牛)剛被宰殺的不久時，肉質尚未硬化時，透過熟成這套功法，讓肉身上帶有的酵素與大氣中的微生物反應，分解肌肉組織後，進而產成獨特風味。
而乾式熟成則是將屠宰後的牛隻大份切塊，吊掛或放置在恒溫的冷藏熟成約20-40天。蒸發出肉裡多餘的水分，更能鎖住肉的香味，口感更多汁
